Ingredients
2 tablespoons extra virgin olive oil
1 medium yellow onion, diced (about 1 1/2 cups)
3 medium carrots, peeled and diced (about 1 cup)
2 celery stalks, diced (about 3/4 cup)
4 garlic cloves, minced
1 teaspoon dried Italian seasoning
1/2 teaspoon smoked paprika
1/4 teaspoon red pepper flakes (optional, for gentle heat)
3 cans (15 oz each) cannellini beans, drained and rinsed
4 cups low sodium vegetable broth
1/2 cup oil-packed sun-dried tomatoes, drained and chopped
2 cups fresh baby spinach, loosely packed
1/2 cup heavy cream
1/2 cup freshly grated Parmesan cheese, plus more for serving
1 tablespoon fresh lemon juice
1 teaspoon kosher salt, plus more to taste
1/2 teaspoon freshly ground black pepper
2 tablespoons chopped fresh basil or flat leaf parsley, for serving
Instructions
Heat the olive oil in a large Dutch oven over medium heat. Add the diced onion, carrots, and celery with a pinch of salt, and cook for 5 to 6 minutes, stirring often.
Stir in the minced garlic, Italian seasoning, smoked paprika, and red pepper flakes if using. Cook for 60 seconds, stirring constantly.
Add the drained cannellini beans, vegetable broth, and chopped sun-dried tomatoes. Bring to a gentle boil over medium high heat.
Reduce the heat to low, partially cover, and simmer for 12 minutes.
Blend a portion of the soup for creaminess with an immersion blender for 15 to 20 seconds, until about one third looks smooth.
Stir in the heavy cream and the grated Parmesan cheese. Keep the heat low and stir gently for about 2 minutes.
Add the baby spinach and the fresh lemon juice. Stir for 1 to 2 minutes, just until the spinach wilts. Taste and season with additional salt and black pepper.
Ladle the soup into warm bowls. Top with extra grated Parmesan, chopped fresh basil, and a drizzle of olive oil. Serve immediately with crusty bread.
Notes
Do not skip the saute: those 6 minutes of softening the aromatics build the sweet, savory foundation. Blend conservatively at first, because you can always blend more but you cannot un-blend. Season in two passes: a pinch of salt with the aromatics, then a final adjustment. If your bowl tastes flat, it almost always needs acid before it needs salt, so add the lemon juice first.
