Velvety one-pot mac and cheese with a golden butternut squash sauce, sharp cheddar, gruyere, and cream cheese. Creamy, comforting, and ready in 30 minutes.

  • Total Time: 30 minutes
  • Yield: 6 to 8 servings 1x

Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 bag (12 to 16 ounces) frozen cubed butternut squash (about 3 cups)
  • 2 cups vegetable broth
  • 1 cup whole milk, plus more as needed
  • 1 pound elbow macaroni (or small shells)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground nutmeg
  • 4 ounces cream cheese, softened and cubed
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded gruyere cheese
  • 1 1/2 teaspoons kosher salt, plus more to taste
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Melt the butter in a large Dutch oven over medium heat. Cook the garlic 30 seconds until fragrant.
  2. Add the frozen squash and vegetable broth. Cover and simmer 10 to 12 minutes until completely tender.
  3. Blend until completely smooth with an immersion blender.
  4. Stir in the milk, Dijon, smoked paprika, and nutmeg. Bring back to a gentle simmer.
  5. Add the dry macaroni and cook 8 to 10 minutes, stirring often, until al dente. Add splashes of warm water or milk if too thick.
  6. Remove from the heat. Stir in the cream cheese until melted, then the cheddar and gruyere a handful at a time.
  7. Season with salt and pepper. Loosen with warm milk until the sauce flows in slow ribbons.
  8. Serve immediately. For a crispy top, scatter buttered panko over and broil 2 to 3 minutes until golden.
