Stovetop mac and cheese in 25 minutes and one pot: the elbows simmer in seasoned milk and water so their own starch builds the sauce, then cheddar and Monterey Jack melt in off the heat, which keeps the sauce glossy instead of grainy. A spoon of cream cheese lets it hold silky through the whole Thanksgiving meal.

  • Total Time: 25 minutes
  • Yield: about 8 cups 1x

Ingredients

Scale
  • 1 pound elbow macaroni
  • 3 cups whole milk
  • 2 cups water
  • 2 tablespoons butter
  • 1 teaspoon fine sea salt, plus more for the table
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika, plus a pinch for serving
  • 1/4 teaspoon black pepper
  • 2 tablespoons cream cheese, cut in pieces
  • 3 cups freshly grated sharp cheddar (about 12 ounces)
  • 1 cup freshly grated Monterey Jack (about 4 ounces)
  • 1 tablespoon chopped chives, for serving (optional)

Instructions

  1. Combine the macaroni, milk, water, butter, salt, Dijon, garlic powder, smoked paprika and black pepper in a large pot or Dutch oven. Bring to a gentle boil over medium high heat, stirring from the bottom so no elbow settles and sticks.
  2. Drop the heat to medium low and simmer, stirring every minute or so and scraping the bottom, until the pasta is just tender with a small bite, 10 to 12 minutes. The liquid should look milky and slightly thick, with about 1/2 cup left around the pasta.
  3. If the pot dries before the pasta is tender, add hot water 1/4 cup at a time. If it looks soupy at the end, simmer 1 minute more; the cheese will tighten it further.
  4. Take the pot off the heat and let it stand for 1 full minute, until no bubbles break the surface. Stir in the cream cheese pieces until they disappear.
  5. Add the cheddar and jack in three handfuls, stirring gently after each one until fully melted before adding the next. The sauce will look loose for a moment, then turn glossy and thick enough to coat the back of the spoon.
  6. Taste for salt, keeping in mind the cheese brings plenty. Rest 2 minutes so the sauce settles into its final consistency.
  7. Serve straight from the pot, finished with a pinch of smoked paprika and the chives. It is at its silkiest in the first 15 minutes, so call the table before you melt the cheese.

Notes

The off-heat rule is the whole recipe: pot off the burner for 1 minute, cheese freshly grated from a block, added in three handfuls. Bagged shreds carry anti-caking starch and melt pasty. Lid on and wrapped in a towel, the finished pot holds silky for about 1 hour; reheat gently with 1/4 cup milk over the lowest heat, never a boil.
