Ingredients
Scale
- 2 tablespoons unsalted butter
- 1 medium yellow onion, finely diced (about 1 1/2 cups)
- 3 cloves garlic, minced
- 1 tablespoon freshly grated ginger (or 1 teaspoon ground ginger)
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon cayenne pepper (optional, for gentle warmth)
- 2 cans (15 ounces each) pure pumpkin puree (not pumpkin pie filling)
- 1 tablespoon pure maple syrup
- 3 cups low sodium vegetable broth (or chicken broth)
- 1/2 cup heavy cream, plus more for swirling
- 1 1/2 teaspoons kosher salt, plus more to taste
- 1/2 teaspoon freshly ground black pepper
- 1/3 cup raw pumpkin seeds (pepitas), toasted, for serving
- Fresh thyme leaves or snipped chives, for serving
Instructions
- Melt the butter in a large Dutch oven or heavy soup pot over medium heat. Add the diced onion with a pinch of salt and cook, stirring occasionally, until soft and translucent, 5 to 6 minutes. Do not let it brown.
- Stir in the garlic and fresh ginger and cook for 1 minute, until fragrant.
- Add the cumin, cinnamon, nutmeg, and cayenne. Stir constantly for 30 seconds, until intensely aromatic.
- Add both cans of pumpkin puree and the maple syrup. Stir for 2 minutes, letting the puree heat through and caramelize very slightly at the edges of the pot.
- Pour in the vegetable broth, scraping the bottom of the pot with a wooden spoon. Bring to a gentle boil, then reduce the heat and simmer uncovered for 10 minutes, stirring once or twice.
- Blend the soup until completely silky. An immersion blender right in the pot is easiest; blend for a full 60 seconds. If using a countertop blender, work in batches, filling it no more than halfway and venting the lid with a towel.
- Return the pot to low heat. Stir in the heavy cream and let the soup warm through for 2 minutes. Do not boil once the cream is in.
- Season with the kosher salt and black pepper. Taste and adjust: more salt wakes up the spices, another teaspoon of maple rounds out any sharpness, and a splash of broth thins a soup that feels too thick.
- Ladle into warmed bowls. Drizzle a spoonful of cream over each serving and drag a toothpick or the tip of a spoon through it to make a swirl.
- Finish each bowl with toasted pumpkin seeds, fresh thyme leaves or chives, and a crack of black pepper. Serve immediately, with crusty bread for dunking.
