The saltine toffee everyone calls christmas crack: crisp salted crackers under a buttery brown sugar toffee boiled for exactly 3 minutes, capped with glossy semisweet chocolate, sprinkles and crushed candy cane. A 10 minute freezer set makes it ready to snap and serve in 25 minutes.

  • Total Time: 25 minutes
  • Yield: about 40 pieces 1x

Ingredients

Scale
  • 40 salted saltine crackers (about 1 sleeve)
  • 1 cup (225 g) unsalted butter
  • 1 cup (200 g) packed dark brown sugar
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon fine sea salt
  • 2 cups (340 g) semisweet chocolate chips
  • 1/3 cup red and green sprinkles
  • 1/4 cup finely crushed candy cane
  • 1/2 teaspoon flaky sea salt, for finishing

Instructions

  1. Heat the oven to 400°F (200°C). Line a rimmed half sheet pan with parchment paper, leaving overhang on two sides.
  2. Arrange the saltine crackers in a single tight layer, salted side up, covering the whole pan. Break a few crackers to fill the edge gaps.
  3. Add the butter and brown sugar to a medium saucepan over medium heat. Stir until the butter melts and the sugar dissolves into a smooth, glossy mixture.
  4. At a full rolling boil, stop stirring and boil for exactly 3 minutes. Remove from the heat and stir in the vanilla and fine sea salt.
  5. Pour the hot toffee over the crackers in a slow zigzag and spread it edge to edge with an offset spatula.
  6. Bake for 5 minutes, until the toffee bubbles all over. Scatter the chocolate chips over the hot surface and let them soften for 2 minutes.
  7. Spread the chocolate into one smooth layer. Add the sprinkles, crushed candy cane, and flaky sea salt while it is still wet.
  8. Freeze for 10 minutes, until the chocolate is matte and firm. Lift the slab out by the parchment and break into about 40 pieces.
