Ingredients
- 1 small red bell pepper, finely diced
- 1 small green bell pepper, finely diced
- 1 tablespoon butter, for the peppers and eggs
- 8 large eggs
- 2 tablespoons milk
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon black pepper
- 2 green onions, thinly sliced
- 1 1/2 cups shredded cheddar (150 g)
- 1 cup shredded pepper jack (100 g)
- 4 large flour tortillas, 10 inch
- 1 teaspoon neutral oil, for the pans
- Salsa and sour cream, to serve
Instructions
- Melt the butter in a wide skillet over medium heat. Add the red and green peppers with a pinch of the salt and cook for 3 to 4 minutes, until soft at the edges and sweet smelling.
- Whisk the eggs with the milk, the remaining salt and the black pepper until the yolks disappear completely.
- Lower the heat under the peppers. Pour in the eggs and stir slowly with a spatula, sweeping the pan in wide folds as soft curds form, about 3 minutes.
- Take the pan off the heat while the eggs still look glossy and slightly loose. Slide them into a warm bowl; they finish cooking inside the tortillas.
- Wipe out the skillet and set it back over medium heat with a second skillet beside it. Brush both pans with the barest film of oil.
- Lay a tortilla flat. Scatter cheddar over one half, spoon a quarter of the eggs and peppers over it, add green onions and pepper jack, then fold the empty half over the filling. Build all four quesadillas.
- Slide two quesadillas into the hot pans. Cook for 2 to 3 minutes per side, pressing once with the spatula, until deep golden and crisp, with the cheese melted through.
- Move the finished quesadillas to a rack in a 200°F oven and crisp the remaining two the same way. Rest 1 minute off the heat before cutting.
- Cut each quesadilla into three wedges and serve with salsa and sour cream at the table.
Notes
Two jobs, cooked separately: that is the whole secret. Eggs scrambled soft and pulled while glossy, tortillas crisped after, so the shells snap and the centers stay tender. Assembled quesadillas keep overnight in the fridge with parchment between them; griddle from cold with 1 extra minute per side.
