Rich, spiced no-bake gingerbread truffles with a white chocolate shell, ready with 20 minutes of active time thanks to a freezer speed-chill trick.

  • Total Time: 50 minutes
  • Yield: 24 truffles 1x

Ingredients

Scale
  • 16 ounces (about 32 cookies) crisp gingersnap cookies
  • 8 ounces cream cheese, softened to room temperature
  • 2 tablespoons molasses (not blackstrap)
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 teaspoon pure vanilla extract
  • 12 ounces white chocolate chips or white melting wafers
  • 1 teaspoon coconut oil
  • Festive sprinkles, crushed gingersnaps, or sanding sugar, for decorating

Instructions

  1. Pulse the gingersnaps in a food processor until they become fine, even crumbs with no large pieces.
  2. Beat the softened cream cheese, molasses, and vanilla until smooth, then stir in the cookie crumbs and spices until a thick dough forms.
  3. Scoop tablespoon-sized portions and roll into smooth 1-inch balls on a parchment-lined baking sheet.
  4. Freeze the balls for 15 minutes until firm to the touch.
  5. Melt the white chocolate with the coconut oil in 20 to 30 second microwave bursts, stirring between each, until smooth.
  6. Dip each chilled ball with a fork, turn to coat, tap off excess, and slide onto the parchment tray.
  7. Decorate immediately with sprinkles, crushed gingersnaps, or sanding sugar while the coating is wet.
  8. Refrigerate 10 to 15 minutes until the shell is firm, then serve chilled or at room temperature.
