- 2 pounds whole carrots, peeled
- 3 tablespoons unsalted butter, melted
- 2 tablespoons honey
- 2 cloves garlic, minced
- 3/4 teaspoon kosher salt, plus flaky salt for finishing
- 1/2 teaspoon freshly cracked black pepper
- 1 tablespoon fresh thyme leaves, plus extra for garnish
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Position a rack in the upper third of the oven and preheat to 425 degrees F. Line a large rimmed baking sheet with parchment paper.
- Trim the carrot tops and tails, then cut each carrot lengthwise into slim batons about 1/2 inch thick, keeping the pieces as uniform as possible.
- Toss the carrot batons on the baking sheet with 1 tablespoon of the melted butter, the kosher salt, and the black pepper until lightly coated.
- Spread the carrots in a single layer with at least an inch of space between pieces, so they roast instead of steam.
- Roast for 13 minutes, until the carrots are nearly tender and starting to brown at the edges.
- While the carrots roast, stir the remaining 2 tablespoons of melted butter with the honey, minced garlic, and thyme leaves in a small bowl.
- Pull the tray from the oven, brush or drizzle the honey butter evenly over the hot carrots, and toss gently to coat.
- Return the tray to the oven for 4 to 5 minutes, until the glaze bubbles and the edges turn deep golden. Finish with flaky salt and fresh herbs, and serve hot.
