Buttery slice-and-bake shortbread studded with tart dried cranberries and fresh orange zest, with sparkling sugar edges. A melt-in-your-mouth Christmas cookie in 20 minutes of active work.

  • Total Time: 25 minutes
  • Yield: 24 cookies 1x

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened but still cool to the touch
  • 3/4 cup powdered sugar, plus more for dusting if you like
  • 1 tablespoon finely grated orange zest (from 1 large orange)
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon fine sea salt
  • 2 cups all-purpose flour, spooned and leveled
  • 2 tablespoons cornstarch
  • 3/4 cup dried cranberries, finely chopped
  • 3 tablespoons coarse sparkling sugar, for rolling the logs

Instructions

  1. Beat the butter, powdered sugar, orange zest, vanilla, and salt for 1 to 2 minutes until smooth and creamy.
  2. Add the flour and cornstarch and mix on low until crumbly with no flour streaks.
  3. Fold in the chopped cranberries and knead lightly until the dough gathers into a soft mass.
  4. Divide in half, roll into two 2-inch logs, roll in sparkling sugar, wrap, and freeze 10 minutes.
  5. Heat the oven to 325 degrees Fahrenheit and line two baking sheets with parchment.
  6. Slice the logs into 1/3-inch rounds and arrange 1 inch apart on the sheets.
  7. Bake 13 to 16 minutes until the edges are set and the bottoms are lightly golden.
  8. Cool 5 minutes on the sheets, then transfer to a rack. Drizzle with orange glaze if you like.
