- 12 cups air popped popcorn (about 1/2 cup kernels), unpopped kernels removed
- 12 ounces white chocolate chips or chopped white chocolate bars
- 1 teaspoon coconut oil
- 6 candy canes or 1/2 cup peppermint candies, crushed
- 1/2 teaspoon pure peppermint extract
- 1/4 teaspoon fine sea salt, plus a pinch for finishing
- 2 tablespoons red and green holiday sprinkles (optional)
Instructions
- Line two large rimmed baking sheets with parchment paper and set them near your work area, because the chocolate sets fast once poured.
- Pop the popcorn using an air popper or a lidded pot with a teaspoon of neutral oil, then pour it into an extra large bowl and pick out every unpopped kernel.
- Place the candy canes in a sturdy zip top bag, seal it, and crush with a rolling pin into a mix of fine dust and small shards.
- Add the white chocolate chips and coconut oil to a microwave safe bowl and heat in 20 second bursts, stirring well between each, until just melted and smooth.
- Stir the peppermint extract into the melted chocolate immediately, then work quickly for the next steps while the chocolate is fluid.
- Pour about one third of the melted chocolate over the popcorn and toss gently with a rubber spatula to start the coating.
- Add the remaining chocolate in two more additions, tossing between each, until every kernel glistens with a thin even layer.
- Scatter half the crushed candy over the popcorn and toss once more, then spread the mixture in a single thin layer across the two prepared baking sheets.
- Sprinkle the remaining crushed candy, the holiday sprinkles if using, and a pinch of sea salt over the top, then let the chocolate set at room temperature for 10 minutes before breaking into clusters.
