Fresh cranberries simmered with orange juice, orange zest, and a pinch of salt into a glossy, balanced sauce in just 15 minutes. Make it up to 10 days ahead or freeze it, and control the texture from rustic and chunky to smooth and sliceable.

  • Total Time: 15 minutes
  • Yield: 2 cups 1x

Ingredients

Scale
  • 12 ounces (340 g) fresh cranberries, about 3 cups, rinsed and picked over
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (120 ml) fresh orange juice
  • 1/2 cup (120 ml) water
  • 1 teaspoon finely grated orange zest, plus more for garnish
  • 1/4 teaspoon fine sea salt
  • 1 cinnamon stick, optional
  • 1/2 teaspoon pure vanilla extract, optional

Instructions

  1. Rinse the cranberries under cool water and discard any that are soft, shriveled, or white.
  2. Add the sugar, orange juice, water, salt, and the cinnamon stick if using to a medium saucepan. Heat over medium high, stirring until the sugar dissolves, about 2 minutes.
  3. Add the cranberries, stir once, and bring back to a boil, about 3 minutes.
  4. Reduce the heat to medium low and simmer gently. The berries will start to pop as their pectin releases.
  5. Simmer 8 minutes for a rustic sauce, 10 minutes for the classic texture, or 12 minutes for a smoother sauce, stirring every couple of minutes.
  6. For a smoother sauce, press the berries against the side of the pan as you stir, or pulse twice with an immersion blender.
  7. Remove from the heat and remove the cinnamon stick. Stir in the orange zest and the vanilla if using.
  8. Taste and adjust: add sugar 1 tablespoon at a time if too tart, or a tiny pinch more salt if it tastes flat.
  9. Transfer to a serving bowl. The sauce looks slightly loose now and sets into a soft gel as it cools.
  10. Cool 30 minutes at room temperature, then cover and refrigerate at least 1 hour before serving. For a fast chill, set the bowl over ice and stir for 10 minutes.
