2 cups old-fashioned rolled oats (use certified gluten free oats if needed)

1 teaspoon baking powder, preferably aluminum free

1 1/2 teaspoons ground cinnamon, plus a little extra for dusting

1/4 teaspoon ground nutmeg, freshly grated if you have it

1/2 teaspoon fine sea salt

2 large eggs, lightly beaten at room temperature

1 3/4 cups milk (whole dairy milk or unsweetened almond milk)

1/3 cup pure maple syrup, plus more for serving

1/4 cup unsalted butter, melted and slightly cooled (or melted coconut oil)

1 teaspoon pure vanilla extract, not imitation

2 medium Honeycrisp or Gala apples, peeled, cored, and diced into 1/2-inch cubes (about 2 1/2 cups)

1/2 cup chopped pecans or walnuts, lightly toasted (optional)

2 tablespoons brown sugar, for sprinkling over the top before baking

Butter or cooking spray, for greasing the baking dish

Instructions

Preheat the oven to 400°F (200°C). Generously grease a 9×13-inch baking dish.

In a large mixing bowl, whisk together the rolled oats, baking powder, cinnamon, nutmeg, and salt for a full 30 seconds.

In a second bowl, whisk the eggs, milk, maple syrup, melted butter, and vanilla extract until smooth.

Pour the wet mixture over the dry oat mixture and stir until just combined.

Fold in the diced apples and the chopped nuts, if using.

Spread the mixture evenly into the prepared baking dish. Sprinkle the brown sugar in an even layer over the entire surface.

Bake for 16 to 18 minutes, until the top turns deep golden brown and the center looks set.

Let the bake rest undisturbed for 5 full minutes before cutting.

Cut into 6 generous squares or 8 smaller portions. Serve warm with extra maple syrup, yogurt, or cold milk.

Dust lightly with extra cinnamon just before serving if you like.

Notes

Dice the apples small and evenly, aiming for neat half-inch cubes, so every piece cooks through completely. Do not overbake this recipe, even by a little: pull the pan from the oven when the center still shows. Choose a light-colored metal pan rather than a glass dish whenever you have the option.
