Ingredients

  • 1/4 cup coconut oil, melted
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the brown sugar, molasses, melted coconut oil, almond milk, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  5. Roll the dough into balls and place them on a baking sheet lined with parchment paper.
  6. Flatten each ball slightly with your hand.
  7. Bake for 10-12 minutes or until slightly golden.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Chill the dough 10 minutes if it feels too soft. Use parchment paper for easy cleanup and even browning.
