Quick and crispy fried strawberry cheesecake sandwiches, perfect for brunch or dessert.

Ingredients

  • 8 thick slices of brioche or challah bread
  • 2 tablespoons butter, for the pan
  • 4 ounces cream cheese, softened
  • 2 tablespoons powdered sugar, plus extra for dusting
  • 1/2 cup fresh strawberries, thinly sliced
  • 1/4 cup strawberry preserves
  • 2 large eggs
  • 3 tablespoons whole milk

Instructions

  1. In a mixing bowl, combine softened cream cheese and powdered sugar. Mix until smooth and fluffy.
  2. Lay out four slices of brioche and spread a generous layer of the cream cheese mixture on each.
  3. Layer fresh strawberry slices over the cream cheese, then add about one tablespoon of strawberry preserves per sandwich.
  4. Top with the remaining bread slices and press gently to seal.
  5. In a shallow dish, beat the eggs and milk until fully combined.
  6. Dip each sandwich into the egg mixture, coating both sides and edges evenly.
  7. Heat a non-stick skillet over medium heat and melt 1 tablespoon of butter until bubbling.
  8. Fry two sandwiches at a time for 2–3 minutes per side until golden brown and crisp.
  9. Repeat with remaining butter and sandwiches.
  10. Transfer cooked sandwiches to a paper towel-lined plate to absorb excess butter.
  11. While still warm, dust with powdered sugar and serve immediately.

Notes

Best served fresh to keep the crust crisp and the filling creamy. Refrigerate leftovers in an airtight container for 1-3 days.
