- 2 medium sweet potatoes, peeled and cubed
- 1 tablespoon brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 tablespoon butter
- 1 package pie crusts (or homemade pie crust)
- Oil for frying
- Powdered sugar for drizzling
- Milk (to mix with powdered sugar for icing)
Instructions
- Boil sweet potatoes until tender, then drain and mash.
- Stir in brown sugar, cinnamon, nutmeg, and butter until well combined.
- Roll out the pie crust and cut into circles.
- Place a spoonful of the sweet potato mixture on one half of each circle.
- Fold the crust over and seal the edges with a fork.
- Heat oil in a frying pan over medium heat.
- Fry the hand pies until golden brown on both sides, then drain on paper towels.
- Mix powdered sugar with a little milk to create a drizzle and pour over the warm pies before serving.
Notes
Use a potato ricer or fork to mash quickly and avoid lumps in the filling. Store cooled pies in an airtight container in the refrigerator for up to three days.
