A fast, no-fuss side dish that combines roasted sweet potatoes and green beans, seasoned simply and brightly with lemon.

Ingredients

  • 3 medium sweet potatoes, peeled and diced into 1-inch pieces
  • 1 pound green beans, ends trimmed
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground pepper to taste
  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the diced sweet potatoes and green beans.
  3. Pour the olive oil over the vegetables and add the garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Mix thoroughly until all the veggies are well coated with the seasoning.
  5. Transfer the mixture onto a large baking sheet, ensuring the vegetables are spread out evenly.
  6. Place the tray in the oven and roast for about 25-30 minutes, or until the sweet potatoes are soft and golden, stirring halfway through.
  7. Once done, take the tray out of the oven and drizzle with lemon juice.
  8. If desired, finish with a sprinkle of Parmesan cheese before serving.

Notes

For meal prep, portion into individual containers. Add lemon just before eating for freshness.
