- 8 oz pasta (such as fusilli or rotini)
- 2 cups corn (fresh, frozen, or canned)
- 1 red bell pepper, diced
- 1/2 cup red onion, finely chopped
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 1/4 cup olive oil
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1/2 cup cotija cheese (optional)
Instructions
- Cook the pasta according to package instructions, then drain and rinse under cold water.
- In a large bowl, combine the cooked pasta, corn, red bell pepper, red onion, cherry tomatoes, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- If desired, sprinkle cotija cheese on top before serving.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
For the best texture, serve right after a quick chill. Store in an airtight container for up to three days.
