Instructions
- Heat oil in a large skillet over medium heat.
- Add diced potatoes and cook for 15 minutes, stirring occasionally, until golden and crispy.
- In a small bowl, mix salt, smoked paprika, chili powder, cumin, and cayenne pepper.
- Sprinkle the spice mix over the potatoes and stir to coat evenly.
- Add minced garlic and cook for 1-2 minutes until fragrant.
- Remove from heat and drizzle with lime juice.
- Garnish with fresh cilantro before serving.
Notes
Dice the potatoes uniformly for even cooking and fewer missed crispy spots. Store cooled potatoes in an airtight container for up to three days.
