- 4 chicken breasts
- 1 cup long-grain white rice
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 lemon, zested and juiced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a slow cooker, heat the olive oil and sauté the chopped onion and garlic until fragrant.
- Season the chicken breasts with salt, pepper, thyme, and rosemary.
- Place the chicken on top of the sautéed onion and garlic.
- Add the rice, chicken broth, lemon juice, and lemon zest to the slow cooker.
- Stir gently to combine.
- Cover and cook on low for 4-6 hours or until the chicken is cooked through and the rice is fluffy.
- Fluff the rice before serving and garnish with fresh parsley.
Notes
Trim extra prep time by buying pre-minced garlic and pre-chopped onions. For extra brown color on the chicken, sear the breasts in a hot pan before placing them in the cooker.
