Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup dried cranberries, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the flour, Parmesan, cranberries, rosemary, salt, and pepper.
  3. In a separate bowl, cream together the butter and sugar until light and fluffy.
  4. Add the egg yolk and vanilla to the butter mixture, mixing well.
  5. Gradually incorporate the flour mixture into the butter mixture until just combined.
  6. Drop spoonfuls of dough onto a lined baking sheet.
  7. Bake for 12-15 minutes until edges are golden brown.
  8. Remove from oven and cool on a wire rack.
