- 1 cup roasted red peppers, chopped
- 1/2 cup fresh basil leaves
- 1/4 cup olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
- Crackers or veggies for serving
Instructions
- In a food processor, combine the softened goat cheese, roasted red peppers, basil, olive oil, garlic, salt, and pepper.
- Blend until smooth and creamy.
- Transfer to a serving bowl and chill in the refrigerator for about 30 minutes before serving.
- Serve with crackers or veggies.
Notes
Use jarred roasted red peppers to save prep time. Store leftovers in an airtight container in the refrigerator for up to three days. Stir in a teaspoon of olive oil if the dip firms up too much.
