  • 4 ounces crumbled feta cheese
  • 1/4 cup honey
  • 1-2 teaspoons red pepper flakes (adjust to taste)

  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional garnish)
  • Extra honey for drizzling (optional garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels.
  2. Season generously with salt, pepper, and dried oregano.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add the chicken breasts and sear for 3-4 minutes per side, until golden brown.
  5. In a small bowl, whisk together honey, red pepper flakes, minced garlic, and lemon juice.
  6. Pour the hot honey sauce over the chicken breasts in the skillet.
  7. Reduce the heat to medium-low, cover the skillet, and let the chicken simmer in the sauce for 8-10 minutes, or until cooked through. Ensure the internal temperature of the chicken reaches 165°F (74°C).
  8. Remove the skillet from the heat.
  9. Sprinkle the crumbled feta cheese over the chicken.
  10. Garnish with fresh parsley and a drizzle of extra honey (if desired).
  11. Serve immediately.

Notes

Trim and flatten thicker parts of the breasts for even cooking. Cook in a 375°F oven for less active time. Store leftovers in an airtight container for up to three days.
