Ingredients

  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/4 cup milk (or non-dairy alternative)
  • 1 teaspoon vanilla extract
  • 3 cups old-fashioned rolled oats
  • 2 cups crispy rice cereal
  • 1 1/2 cups chopped pecans
  • 2 cups powdered sugar
  • 3-4 tablespoons milk (or non-dairy alternative)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Line a large baking sheet with parchment paper.
  2. In a large heatproof bowl, add the rolled oats, crispy rice cereal, and chopped pecans.
  3. In a medium saucepan, combine the butter, granulated sugar, light brown sugar, and 1/4 cup milk.
  4. Set the saucepan over medium heat and stir until combined.
  5. Bring the mixture to a full rolling boil, stirring constantly.
  6. Once boiling, stir and let it boil for exactly 1 minute.
  7. Remove from heat and stir in the vanilla extract.
  8. Pour the hot mixture over the oats, rice cereal, and pecans, then stir until evenly coated.
  9. Use a cookie scoop to drop rounded spoonfuls onto the prepared baking sheet.
  10. If desired, shape each mound into a bite while warm.
  11. Refrigerate for at least 30 minutes until firm.
  12. For the glaze, whisk together the powdered sugar, 3 tablespoons milk, and 1/2 teaspoon vanilla until smooth.
  13. If too thick, add more milk gradually.
  14. Remove bites from the refrigerator and drizzle the glaze over each bite.
  15. Let the glaze set, then serve.

Notes

For a dairy-free version, swap milk and butter for alternatives. Store in an airtight container in the fridge for up to one week.
