- 1/2 cup butter
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed

- 3 cups old-fashioned rolled oats
- 2 cups crispy rice cereal
- 1 1/2 cups chopped pecans
- 2 cups powdered sugar
- 3-4 tablespoons milk (or non-dairy alternative)
- 1/2 teaspoon vanilla extract
Instructions
- Line a large baking sheet with parchment paper.
- In a large heatproof bowl, add the rolled oats, crispy rice cereal, and chopped pecans.
- In a medium saucepan, combine the butter, granulated sugar, light brown sugar, and 1/4 cup milk.
- Set the saucepan over medium heat and stir until combined.
- Bring the mixture to a full rolling boil, stirring constantly.
- Once boiling, stir and let it boil for exactly 1 minute.
- Remove from heat and stir in the vanilla extract.
- Pour the hot mixture over the oats, rice cereal, and pecans, then stir until evenly coated.
- Use a cookie scoop to drop rounded spoonfuls onto the prepared baking sheet.
- If desired, shape each mound into a bite while warm.
- Refrigerate for at least 30 minutes until firm.
- For the glaze, whisk together the powdered sugar, 3 tablespoons milk, and 1/2 teaspoon vanilla until smooth.
- If too thick, add more milk gradually.
- Remove bites from the refrigerator and drizzle the glaze over each bite.
- Let the glaze set, then serve.
Notes
For a dairy-free version, swap milk and butter for alternatives. Store in an airtight container in the fridge for up to one week.
