Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup of rice
  • 1 cup of chicken broth
  • ½ cup of honey BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Season the chicken breasts with garlic powder, salt, and pepper.
  3. Add the chicken to the skillet and cook for about 5-7 minutes on each side until browned.
  4. Remove the chicken and set aside.
  5. In the same skillet, add the rice and chicken broth. Stir to combine.
  6. Place the chicken back in the skillet and pour the honey BBQ sauce over everything.
  7. Cover and cook on low heat for about 15 minutes or until the rice is cooked and has absorbed the broth.
  8. Serve hot, garnished with chopped parsley if desired.
