Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a large skillet over medium heat, sear seasoned chicken for about 5 minutes on each side until browned.
  3. Whisk together BBQ sauce and honey in a small bowl; pour over the chicken.
  4. Add rice and chicken broth; stir to combine.
  5. Bring to a simmer; cover and cook on low for about 20 minutes until rice is tender.
  6. During the last 5 minutes of cooking, add mixed vegetables on top to steam.
  7. Let sit for 5 minutes before fluffing rice with a fork and serving.

Notes

Trim and pat the chicken dry before seasoning for better browning. Use pre-cooked rotisserie chicken to save time. This dish can be stored in the fridge for up to three days or frozen for a month.
