Ingredients

  • 1 cup fresh cranberries, chopped
  • 1 cup oats
  • 1/2 cup white chocolate chips
  • 1/2 cup pecans, chopped
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract.
  4. In another bowl, mix the flour, baking soda, and salt. Gradually blend this into the creamed mixture.
  5. Stir in the oats, chopped cranberries, white chocolate chips, and pecans.
  6. Drop spoonfuls of the dough onto ungreased baking sheets.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

Chop the cranberries and pecans while the oven preheats to save time. Use a cookie scoop for uniform shapes and faster portioning.
