Instructions
- Crush the Biscoff cookies into fine crumbs.
- In a mixing bowl, combine the cookie crumbs with softened cream cheese until well mixed.
- Roll the mixture into small balls and place them on a baking sheet.
- Freeze for about 30 minutes to set.
- Melt the white chocolate and mix in cookie butter.
- Dip each truffle into the white chocolate mixture to coat.
- Place back on the baking sheet and let cool until the chocolate hardens.
Notes
Use room temperature cream cheese for easier mixing. You can swap white chocolate for milk or dark chocolate for variation.
