Ingredients

  • 1/2 cup brewed coffee
  • 1/4 cup cocoa powder
  • 1/4 cup maple syrup or sweetener of choice
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 cup mascarpone cheese or yogurt (optional for creaminess)
  • Chocolate shavings or cocoa powder for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the oats, milk, brewed coffee, cocoa powder, maple syrup, vanilla extract, and baking powder until well combined.
  3. If using, fold in the mascarpone cheese for added creaminess.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 25 to 30 minutes, or until set and slightly golden.
  6. Let it cool for a few minutes before serving.
  7. Top with chocolate shavings or a dusting of cocoa powder before enjoying!

Notes

Use instant brewed coffee or leftover strong coffee to skip extra steps. To speed prep, mix everything directly in the baking dish and stir, then bake. Portion into muffin tins for individual servings and shorter bake time.
