- 1/2 cup chia seeds
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- Juice and zest of 1 lemon
- 1/2 teaspoon vanilla extract

- 1/2 teaspoon baking soda
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the oats, chia seeds, almond flour, salt, and baking soda.
- In another bowl, mix the honey (or maple syrup), melted coconut oil, lemon juice, lemon zest, and vanilla extract.
- Combine the wet ingredients with the dry ingredients and stir until well mixed.
- Scoop tablespoons of the cookie mixture onto the prepared baking sheet and flatten them slightly.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow to cool before serving. Enjoy your healthy cookies!
Notes
Ensure that the coconut oil is melted but not too hot to avoid cooking the mixture. Flatten cookies slightly for even baking.
