Delightful low-carb deviled eggs with a creamy filling of mayonnaise and Dijon mustard, perfect for any occasion.

Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Paprika for garnish
  • Chives or green onions (optional)

Instructions

  1. Hard boil the eggs by placing them in a pot and covering them with water. Bring to a boil, then reduce the heat and simmer for 10 minutes. Once cooked, remove the eggs and let them cool.
  2. Peel the eggs carefully and slice them in half lengthwise.
  3. Scoop out the yolks into a bowl and mash them with mayonnaise, Dijon mustard, salt, and pepper until the mixture is smooth.
  4. Spoon or pipe the yolk mixture back into the egg whites, filling them generously.
  5. Sprinkle with paprika and chopped chives or green onions, if desired.
  6. Serve chilled or at room temperature for an ideal snacking experience.

Notes

To amp up nutrients, incorporate finely diced bell peppers or cucumbers into the yolk mixture.
