- 1 cup almond flour
- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup butter, softened
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/4 teaspoon salt
- 1/2 cup cherry jam
- 1 cup powdered sugar (for icing)
- 1-2 tablespoons milk (for icing)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and powdered sugar until fluffy.
- Add in the vanilla and almond extracts, mixing well.
- Gradually add in the almond flour, all-purpose flour, and salt, mixing until a dough forms.
- On a floured surface, roll out the dough to about 1/4-inch thickness.
- Cut out cookies using cookie cutters, and cut a smaller shape in the center of half of the cookies.
- Place cookies on a baking sheet and bake for 10-12 minutes until lightly golden.
- Let cookies cool completely.
- Spread cherry jam on the whole cookies, then place the cut-out cookies on top.
- For icing, mix powdered sugar with milk until smooth, then drizzle over the cookies.
- Allow the icing to set and enjoy!
Notes
Work quickly when rolling and cutting to avoid the dough becoming greasy. Store in an airtight container for up to three days.
