- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1 cup mini marshmallows
- 1/2 cup crushed peppermint candies
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla.
- In another bowl, combine the flour, cocoa powder, baking soda, and salt. Gradually add this to the butter mixture, mixing until well combined.
- Fold in the chocolate chips, mini marshmallows, and crushed peppermint.
- Drop spoonfuls of dough onto ungreased baking sheets.
- Bake for 10-12 minutes, or until cookies are set.
- Allow cookies to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely. Enjoy!
Notes
To speed up creaming time, use room temperature butter. Store in an airtight container at room temperature for up to three days.
