- 4 Chicken breasts
- 1/4 cup Honey
- 1/4 cup Lime juice
- 2 tbsp Olive oil
- 1 tsp Salt
- 1/2 tsp Black pepper
- 1 Avocado, diced
- 2 cups Cooked rice
- 1/4 cup Cilantro (optional)
Instructions
- Marinate chicken breasts in a mixture of honey, lime juice, olive oil, salt, and pepper for at least 30 minutes.
- Grill or pan-cook the chicken until fully cooked.
- While the chicken cooks, prepare the rice according to package instructions.
- Once the rice is cooked, fluff with a fork and mix in diced avocado and chopped cilantro, if using.
- Slice the cooked chicken and stack it over the avocado rice.
- Drizzle any remaining honey lime sauce over the dish and serve.
Notes
For quicker prep, use pre-cooked microwave rice. Store components separately to maintain texture.
