Ingredients

  • 4 Chicken breasts
  • 1/4 cup Honey
  • 1/4 cup Lime juice
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 Avocado, diced
  • 2 cups Cooked rice
  • 1/4 cup Cilantro (optional)

Instructions

  1. Marinate chicken breasts in a mixture of honey, lime juice, olive oil, salt, and pepper for at least 30 minutes.
  2. Grill or pan-cook the chicken until fully cooked.
  3. While the chicken cooks, prepare the rice according to package instructions.
  4. Once the rice is cooked, fluff with a fork and mix in diced avocado and chopped cilantro, if using.
  5. Slice the cooked chicken and stack it over the avocado rice.
  6. Drizzle any remaining honey lime sauce over the dish and serve.

Notes

For quicker prep, use pre-cooked microwave rice. Store components separately to maintain texture.
