Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for icing)
  • 1-2 tablespoons milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and brown sugar until smooth.
  3. Beat in the egg and vanilla extract.
  4. In another bowl, mix the flour, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture until combined.
  5. Roll out the dough on a floured surface to about 1/4 inch thick. Cut into rectangles.
  6. Place a spoonful of the brown sugar and cinnamon mixture in the center of half the rectangles, and top with the remaining rectangles. Seal the edges with a fork.
  7. Place on a baking sheet and bake for 15-18 minutes until golden.
  8. To make the icing, mix powdered sugar and milk until smooth. Drizzle over the cooled cookies.

Notes

Chill the dough briefly if it feels too soft. Skipping the icing adds speed; consider adding sprinkles instead.
