- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar (for icing)
- 1-2 tablespoons milk (for icing)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the butter and brown sugar until smooth.
- Beat in the egg and vanilla extract.
- In another bowl, mix the flour, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture until combined.
- Roll out the dough on a floured surface to about 1/4 inch thick. Cut into rectangles.
- Place a spoonful of the brown sugar and cinnamon mixture in the center of half the rectangles, and top with the remaining rectangles. Seal the edges with a fork.
- Place on a baking sheet and bake for 15-18 minutes until golden.
- To make the icing, mix powdered sugar and milk until smooth. Drizzle over the cooled cookies.

Notes
Chill the dough briefly if it feels too soft. Skipping the icing adds speed; consider adding sprinkles instead.
