- 1 cup Low-fat Greek Yogurt
- 1 cup All-Purpose Flour
- 1 tbsp Baking Powder
- 1 tbsp Italian Seasoning
- 1 tsp Garlic Powder
- 1 tsp Salt
- 15 g Pizza Sauce
- 20 g Low-fat Cheese
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- In a bowl combine yogurt, flour, baking powder, Italian seasoning, garlic powder, and salt.
- Mix until a soft dough forms; it should be tacky but not overly sticky.
- Lightly flour a surface and divide dough into four equal pieces.
- Roll each piece into a 4 inch circle about 1/4 inch thick.
- Spoon about 5 g of pizza sauce into the center of each circle.
- Top sauce with 5 g of low fat cheese, keeping the filling away from edges.
- Fold the dough over to form a pocket and press edges firmly to seal.
- Place pockets seam side down on the baking sheet and brush tops lightly with a bit of yogurt if desired for color.
- Bake for 12 to 15 minutes until golden and puffed, then cool for 2 minutes before serving.
Notes
For a low-carb option, use almond and coconut flour. Freeze assembled but unbaked pockets for future baking.
