Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the chopped nuts and mini chocolate chips into the dough if desired.
  7. To make the streusel topping, combine the flour, brown sugar, and ground cinnamon in a small bowl. Drizzle the melted butter over and mix until crumbly.
  8. Scoop the dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Sprinkle the streusel topping generously over each cookie dough ball.
  10. Bake for 10-12 minutes, or until the edges are lightly golden and centers are still soft.
  11. Remove from the oven and cool on the baking sheets for 5 minutes before transferring to wire racks.
