A comforting and creamy French Onion Chowder ready in under 30 minutes, perfect for warming up on cold days.

Ingredients

  • 4 large onions, thinly sliced
  • 3 tablespoons butter
  • 4 cups beef or vegetable broth
  • 1 cup heavy cream
  • 1 cup grated Gruyère cheese
  • Salt and pepper to taste
  • Fresh thyme (optional) for garnish
  • Crusty bread for serving

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the sliced onions and cook until caramelized, about 20-25 minutes, stirring frequently.
  3. Add the broth to the pot and bring to a simmer. Cook for an additional 10 minutes.
  4. Stir in the heavy cream and season with salt and pepper to taste.
  5. Remove from heat and stir in half of the Gruyère cheese until melted.
  6. Serve hot, topped with the remaining Gruyère cheese and fresh thyme. Enjoy with crusty bread.

Notes

For optimal flavor, fully caramelize the onions. Use pre-sliced onions for quick prep, or substitute Gruyère with Swiss cheese or cheddar.
