- 4 large onions, thinly sliced
- 3 tablespoons butter
- 4 cups beef or vegetable broth
- 1 cup heavy cream
- 1 cup grated Gruyère cheese
- Salt and pepper to taste
- Fresh thyme (optional) for garnish
- Crusty bread for serving
Instructions
- In a large pot, melt the butter over medium heat.
- Add the sliced onions and cook until caramelized, about 20-25 minutes, stirring frequently.
- Add the broth to the pot and bring to a simmer. Cook for an additional 10 minutes.
- Stir in the heavy cream and season with salt and pepper to taste.
- Remove from heat and stir in half of the Gruyère cheese until melted.
- Serve hot, topped with the remaining Gruyère cheese and fresh thyme. Enjoy with crusty bread.
Notes
For optimal flavor, fully caramelize the onions. Use pre-sliced onions for quick prep, or substitute Gruyère with Swiss cheese or cheddar.
