- 1 cup of quinoa
- 2 cups of vegetable broth

- 1 bell pepper, diced
- 1 zucchini, sliced
- 1 can black beans, rinsed

- Salt and pepper to taste
- 2 tablespoons fresh cilantro, chopped
Instructions
- In a pot, bring vegetable broth to a boil.
- Add quinoa, reduce heat to low, cover, and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add bell pepper and zucchini, sauté for 5 minutes until tender.
- Stir in black beans, cumin, salt, and pepper; cook for an additional 2 minutes.
- Fluff quinoa with a fork and mix in the sautéed vegetables.
- Garnish with fresh cilantro before serving.
