  • Salt and pepper to taste
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. In a pot, bring vegetable broth to a boil.
  2. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes.
  3. In a skillet, heat olive oil over medium heat.
  4. Add bell pepper and zucchini, sauté for 5 minutes until tender.
  5. Stir in black beans, cumin, salt, and pepper; cook for an additional 2 minutes.
  6. Fluff quinoa with a fork and mix in the sautéed vegetables.
  7. Garnish with fresh cilantro before serving.
