A quick and simple slow cooker recipe for flavorful shredded chicken, perfect for tacos, bowls, or salads.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 packet taco seasoning (optional)
  • 1 cup corn (optional)
  • 1 cup black beans (drained and rinsed, optional)
  • 1 cup shredded cheese (for topping, optional)
  • Fresh cilantro (for garnish, optional)

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Pour salsa over the chicken, and add taco seasoning if using.
  3. If desired, add corn and black beans.
  4. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  5. Shred the chicken in the slow cooker with two forks and stir everything together.
  6. Serve topped with shredded cheese and garnish with cilantro if desired.

Notes

Use pre-cooked chicken to save time. Canned corn and beans are fine; rinse beans to reduce sodium. Store leftovers in airtight containers.
