- 2 ripe bananas, mashed
- 1 cup oats
- 1/2 cup milk (or non-dairy milk)
- 1/4 cup honey or maple syrup
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, mix the mashed bananas, milk, and honey until well combined.
- In another bowl, combine oats, baking powder, baking soda, cinnamon, and salt.
- Pour the wet ingredients into the dry ingredients and mix until just combined. If using, fold in nuts or chocolate chips.
- Divide the batter evenly among the muffin cups.
- Bake for 15-20 minutes, or until a toothpick comes out clean.
- Let cool for a few minutes before serving.
Notes
Don’t overmix to keep muffins tender. Test for doneness at 15 minutes; all ovens vary.
