Ingredients

  • 1 cup olives (mixed varieties, pitted)
  • 2 cloves garlic, minced
  • 2 tablespoons capers, drained
  • 2 tablespoons fresh parsley, chopped

  • Salt and pepper to taste

Instructions

  1. In a food processor, combine the olives, garlic, capers, parsley, lemon juice, and olive oil.
  2. Pulse until the mixture is finely chopped but not pureed.
  3. Taste and season with salt and pepper as needed.
  4. Serve as a dip, spread on bread, or alongside crackers.

Notes

Tapenade can be made a day in advance to let the flavors meld. Store in the refrigerator for up to one week in an airtight container.
