Easy Focaccia Muffins

Quick and delicious muffins with Mediterranean flavors, perfect for any occasion.

Ingredients

  • 12 frozen dinner rolls
  • Cherry tomatoes, sliced, to taste
  • Black olives, sliced, to taste
  • Green olives, sliced, to taste
  • Feta cheese, crumbled, to taste
  • 6 teaspoons grated Parmesan cheese, to taste
  • 1 1/2 teaspoons dried oregano
  • Dash of salt
  • 12 teaspoons olive oil, for drizzling before toppings

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. Place the frozen dinner rolls in each muffin cup, pressing slightly to fit.
  3. Drizzle each roll with 1 teaspoon of olive oil.
  4. Top with sliced cherry tomatoes, black and green olives, crumbled feta, and grated Parmesan.
  5. Sprinkle with dried oregano and a pinch of salt.
  6. Bake for 15–20 minutes, or until rolls are golden and cheese is melted.
  7. Remove from the oven, let cool slightly, then serve warm.

Notes

To make the muffins gluten-free, use gluten-free dinner rolls. Experiment with different toppings based on preference.
