Ingredients

  • 1 cup rolled oats
  • 2 cups milk (or almond milk)
  • 1 cup fresh blueberries
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. In a medium saucepan, combine rolled oats, milk, maple syrup, vanilla extract, baking powder, cinnamon, and salt.
  2. Bring the mixture to a boil over medium heat, then lower to a simmer.
  3. Cook, stirring occasionally, for about 5-7 minutes until the oats are creamy and have absorbed most of the liquid.
  4. Gently fold in fresh blueberries and cook for an additional minute.
  5. Serve warm in a bowl and add more blueberries or a drizzle of syrup on top if desired.

Notes

For extra creaminess, stir in a tablespoon of Greek yogurt or nut butter right before serving.
