A comforting and flavorful Thai ginger chicken soup made in a slow cooker with minimal effort.

Ingredients

  • 1 pound chicken breast
  • 2 cups chicken broth
  • 1 can (14 oz) coconut milk
  • 2 tablespoons fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 cup carrots, sliced
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Place chicken in the slow cooker.
  2. Add the chicken broth, coconut milk, ginger, garlic, carrots, bell peppers, and broccoli.
  3. Stir in the soy sauce and lime juice, and season with salt and pepper.
  4. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours until chicken is cooked through.
  5. Shred the chicken in the soup before serving.
  6. Garnish with fresh cilantro and enjoy!

Notes

Cool soup to room temperature before refrigerating. This soup freezes well for up to three months; thaw overnight in the fridge before reheating.
