These crispy sweet potato and red lentil patties are healthy and satisfying, perfect for busy nights. Baked in the oven for convenience, they’re flavorful and easy to make.

Ingredients

  • 2 cups sweet potatoes, peeled and cubed
  • 1 cup red lentils, cooked
  • 1/2 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1/2 cup breadcrumbs
  • Olive oil, for brushing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil the sweet potatoes until tender, then mash them in a bowl.
  3. In another bowl, mix the cooked red lentils, onion, garlic, cumin, paprika, salt, and pepper.
  4. Combine the mashed sweet potatoes with the lentil mixture and mix well.
  5. Add breadcrumbs to the mixture and form into patties.
  6. Place the patties on a baking sheet lined with parchment paper and brush lightly with olive oil.
  7. Bake for 25-30 minutes, flipping halfway, until golden and crispy.
  8. Serve warm with your favorite dipping sauce.

Notes

For extra crispness, finish under the broiler for 1-2 minutes while watching closely. Store leftovers in the refrigerator for up to three days and reheat in a hot oven.
