Crispy on the outside, tender on the inside, these mashed potato patties are a quick and easy side or snack.

Ingredients

  • 2 cups mashed potatoes
  • 1/2 cup all-purpose flour
  • 1/4 cup grated cheese (optional)
  • 1/4 cup chopped green onions
  • 1 egg
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a mixing bowl, combine the mashed potatoes, flour, cheese, green onions, egg, salt, and pepper. Mix until well combined.
  2. Form the mixture into small patties.
  3. Heat oil in a frying pan over medium heat.
  4. Fry the patties for about 3-4 minutes on each side or until golden brown.
  5. Remove from the pan and place on paper towels to drain excess oil. Serve warm.

Notes

Use cold leftover mashed potatoes for better texture. If the mix is sticky, add flour one tablespoon at a time. For extra crispness, lightly dust patties with flour before frying.
