- 1 cup dried chickpeas (soaked overnight)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon baking powder
- Salt and pepper to taste
- Oil for frying
Instructions
- Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Process until a coarse mixture forms.
- Form the mixture into small balls or patties.
- Heat oil in a deep skillet over medium heat. Fry the falafel in batches until golden brown, about 4-5 minutes on each side.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve with pita, salads, or your favorite dipping sauce.
Notes
Refrigerate the shaped balls for 15 minutes before frying to reduce breakage. Fry in shallow oil and monitor the temperature for consistent browning.
