Instructions
- Place the cottage cheese in a mixing bowl.
- Add the cooked chicken, celery, red onion, bell pepper, and parsley to the bowl.
- Drizzle the lemon juice over the mixture.
- Season with salt and pepper to taste.
- Toss the ingredients until well mixed and evenly coated.
- Serve chilled or at room temperature.
Notes
Use rotisserie chicken to save time. Pre-chopped veggies can also speed up preparation.
