A sweet, no-cook ambrosia salad that comes together in minutes, perfect for potlucks and gatherings.

Ingredients

  • 1 can (15 oz) pineapple chunks, drained
  • 1 can (11 oz) mandarin oranges, drained
  • 1 cup mini marshmallows
  • 1 cup shredded coconut
  • 1 cup sour cream or whipped cream
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Open and drain the pineapple chunks and mandarin oranges.
  2. In a large mixing bowl, combine the pineapple, mandarin oranges, mini marshmallows, and shredded coconut.
  3. Add the sour cream or whipped cream and mix gently until everything is well combined.
  4. If using, fold in the chopped nuts.
  5. Chill in the refrigerator for at least one hour before serving.
  6. Serve and enjoy this sweet and creamy salad at your next gathering.

Notes

Drain the canned fruit very well to prevent a watery salad. To save cleanup, assemble the salad in a large bowl that can also serve as the presentation dish.
