Ingredients

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • Powdered sugar for rolling

Instructions

  1. In a large bowl, mix granulated sugar, brown sugar, cocoa powder, cinnamon, baking powder, and salt.
  2. Stir in melted butter, eggs, and vanilla extract until well combined.
  3. Gradually add the flour, mixing until smooth.
  4. Chill the dough in the refrigerator for at least 30 minutes.
  5. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Scoop tablespoon-sized portions of dough and roll them into balls.
  7. Roll each ball in powdered sugar until well coated.
  8. Place on the prepared baking sheet about 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are set.
  10. Let cool before serving with coffee.

Notes

Store baked cookies in an airtight container at room temperature for up to three days. For longer storage, freeze baked cookies layered with parchment for up to three months.
